Minted Ambrosia - cooking recipe

Ingredients
    1 1/2 c. pineapple chunks
    2 grapefruit, segmented
    2/3 c. sugar
    2/3 c. water
    2 tsp. grated orange rind
    2 drops mint flavoring or more
    1/2 c. flaked coconut
    6 red or green cherries
    fresh mint leaves
Preparation
    Place pineapple chunks and grapefruit tissue-free segments in a covered container. Cook sugar and water until thick, about 5 minutes. Add orange rind and mint flavoring.
    Pour over fruit and refrigerate until thoroughly chilled. Spoon into compotes.
    Top each with coconut. Garnish with cherry and fresh mint leaves. Makes 6 servings.
