Chinese New Year Rice - cooking recipe

Ingredients
    3 Tbsp. oil
    1 lb. chicken, cut into bite size pieces
    3 1/2 c. chilled rice
    3 green onions, sliced
    3 stalks celery, sliced
    3 carrots, shredded
    2 Tbsp. soy sauce
    1/8 tsp. pepper
Preparation
    Heat oil in skillet or wok.
    Stir-fry chicken.
    Add vegetables to stir-fry.
    Add soy sauce and rice and cook until heated through.
    Serves 6.
