Swiss Steak - cooking recipe
Ingredients

2 lb. round steak, cut in strips
1/3 cup cooking oil
1 cup flour
1 tsp. salt
1/2 tsp. pepper
1/2 onion, sliced in rings
6 carrots, peeled and sliced crosswise
Preparation

Mix flour, salt and pepper.
Cover meat in flour mixture. Heat oil in a large skillet.
Brown flour covered meat in hot oil. Remove meat from pan.
Drain grease.
Return meat to pan.
Add onions and carrots.
Cover bottom of pan with water.
Reduce heat and simmer until meat is tender and carrots are done; adding water as needed.
Add a small amount of flour mixture to thicken for gravy if needed.
