Fritata - cooking recipe
Ingredients

zucchini squash, sliced thin
1 large onion, chopped
1/2 c. grated cheese
4 eggs, beaten slightly
olive oil
Stove Top dressing
1 green pepper, chopped
thyme
oregano
basil
Preparation

Saute squash, onion, green pepper in a small amount of olive oil.
Prepare Stove Top dressing according to the directions. Combine this with zucchini mixture.
Cool and add beaten eggs (or egg substitute or egg whites).
Add seasonings and grated cheese. Taste along the way!
Spread into pan or dish that has been sprayed with Pam.
Bake at 300\u00b0 for 45 minutes or so until firm. Allow to cool.
Refrigerate overnight.
Cut into squares.
