Chinese Chicken With Peppers And Onions - cooking recipe

Ingredients
    3 chicken breasts (no skin)
    3 medium green and red peppers
    3 medium onions
    2 Tbsp. soy sauce
    4 Tbsp. corn oil
    4 pieces ginger (size of nickel)
    3 small hot peppers or 1/8 tsp. cayenne
    1 tsp. sesame hot oil (optional)
Preparation
    Cut chicken, green and red peppers and onions into 1-inch squares.
    In a wok or large frying pan, heat 2 tablespoons of corn oil until begins to smoke.
    Add ginger, hot peppers and chicken. Stir until chicken is cooked (5 minutes).
    Remove to a serving dish.
    Add 2 more tablespoons oil.
    Add green peppers and onions; stir-fry until crisp-tender.
    Return chicken.
    Add soy sauce; stir 1 minute.
    Sprinkle with sesame hot oil.
    Serve with rice.
