Crispy Potato Chicken - cooking recipe

Ingredients
    1 large baking potato
    4 chicken breast halves (skinless)
    1 Tbsp. Dijon mustard
    1 large clove garlic
    1 1/2 tsp. olive oil
Preparation
    Peel and grate potatoes; put into water for 5 minutes.
    Drain and pat dry.
    Mix in olive oil.
    Put chicken, bone side down, in a foil-lined pan.
    Spread each with mustard mix (mustard and garlic).
    Form a skin over each breast with potatoes.
    Season with salt and pepper.
    Sprinkle with Parmesan cheese and cilantro. Bake at 425\u00b0, uncovered, for 35 to 40 minutes.
