Baked Rhubarb(Diabetic) - cooking recipe

Ingredients
    2 lb. rhubarb, cut in 1-inch sq. (4 c.)
    2 tsp. grated orange peel
    2 Tbsp. orange juice
    3/4 c. fructose
    4 drops red food coloring
Preparation
    Wash and cut rhubarb.
    Grate orange peel, being careful to use only the colored part of the peel.
    Mix all ingredients together and put them in a casserole.
    Cover and bake at 350\u00b0 for 40 minutes.
    Makes 8 servings.
