3 c. cooked rice
1/4 c. grated Parmesan cheese
1 egg, beaten
1/2 medium green bell pepper, sliced
1 medium onion, sliced into rings
2 c. sliced mushrooms
2 garlic cloves, minced
1 c. low-sodium tomato sauce
2 tsp. oregano
1 tsp. fennel seed (optional)
4 1/2 oz. part-skim Mozzarella cheese, shredded
Preparation

Preheat oven to 425\u00b0.
Spray a 12-inch round pizza pan with nonstick cooking spray.
In bowl, mix rice, Parmesan cheese and egg together until thoroughly combined.
Press rice mixture firmly into prepared pizza pan to form a \"crust\".
Bake 20 minutes. Spray skillet with nonstick cooking spray.
Add onion and pepper slices and cook, stirring frequently, until onion is tender, about 5 minutes.
