Roast Turkey - cooking recipe
Ingredients

8 to 10 lb. turkey
1 tsp. sage
1 tsp. thyme
1 Tbsp. pepper
salt
1 celery stalk
1 onion
1 garlic clove
3 slices bacon
water
Preparation

Rinse
turkey inside and out.
Remove neck and giblets. Mix spices in a bowl and rub mixture inside and on the outside of the turkey.
Cut
celery and onion in large pieces.
Place along with garlic inside of turkey.
Put bacon strips over the breast.
Add enough
water
to
steam the bird in moist heat. Maintain water level by checking.\tStart with 14 coals on top and 14
coals on the bottom for 20 minutes.\tThen reduce to 12 coals on top\tand 10\ton the bottom for 1 1/2 hours or longer until done.
Replenish coals as needed.
