Potato Salad - cooking recipe

Ingredients
    Irish potatoes
    boiled eggs
    1 small jar pimentos
    sweet pickle relish
    mayonnaise
    mustard
    additional salt (if needed)
Preparation
    Peel and dice potatoes into fairly small cubes (about 1/2-inch).
    Boil in salted water until they are tender but firm. Drain and let cool for a few minutes.
    Add chopped boiled eggs, relish, pimentos and mayonnaise.
    Mix.
    Add just enough mustard to give a pleasant yellow color.
    Add salt and pepper to taste.
    Good hot or cold and easy to make!
