1 medium eggplant, cut into 1/2-inch cubes
1 lb. can tomatoes
1 medium onion
1 green pepper (medium)
1 stalk celery
1 small can mushrooms
garlic powder
oregano
Preparation

Parboil eggplant 6 minutes.
Drain and put in a bowl.
Arrange in a casserole, eggplant and mixture, in layers, starting and ending with mixture.
Bake for 1 hour in a 350\u00b0 oven.
Serves 4 as a side dish.
