Sweet Potato Pie - cooking recipe

Ingredients

1 c. mashed sweet potatoes
1/3 c. oleo, melted
2 eggs, beaten
1/3 c. half and half or coffee cream
1/2 tsp. baking powder
pinch of salt
1/3 tsp. ground nutmeg
1 tsp. vanilla
1 c. white sugar

Preparation

Combine sweet potatoes with all the ingredients.
Blend with electric mixer until smooth.
Pour into pie shell (unbaked).
Bake in preheated oven at 400\u00b0 about 30 minutes or until golden brown and puffy.
Double ingredients makes 3 pies.
