Barley Salad With Corn And Peppers - cooking recipe

Ingredients
    1 c. medium pearl barley
    8 c. water
    salt
    2 ears corn, husked
    1 red bell pepper
    1 poblano pepper
    3 green onions, thinly sliced crosswise
    1/2 medium papaya, peeled, seeded and 1/3-inch diced
    2 Tbsp. fresh cilantro, chopped
    3/4 tsp. ground cumin
    1/4 c. fresh lime juice
    1 Tbsp. cider vinegar
    1/8 tsp. ground black pepper
    3 Tbsp. olive oil
Preparation
    Put barley in bowl.
    Cover with warm water and rub gently. Drain and repeat until water is clear.
    Drain.
    Boil 8 cups of water.
    Add 2 teaspoons salt and barley and return to boil. Simmer covered until tender, about 30 minutes. Drain and rinse with cold water and drain well.
