Corn Spoon Bread(Sweet Corn Cake) - cooking recipe

1 c. thawed frozen corn
1/2 c. evaporated milk
1/3 c. nonfat dry milk powder
3 Tbsp. honey
2 tsp. vanilla
1/2 tsp. cinnamon
1/2 c. + 2 Tbsp. cornmeal (yellow)
1/2 tsp. baking soda
1 c. buttermilk
1 egg, well beaten
1 Tbsp. melted margarine
Preparation

In nonstick skillet, combine corn, milk, milk powder, 1 tablespoon honey, 1 teaspoon vanilla and 1/4 teaspoon cinnamon. Cook over medium heat until liquid is absorbed and corn is brown and sticky, stirring constantly. Preheat oven to 325\u00b0; spray 1-quart baking dish with cooking spray.
