Baked Spinach Tomatoes - cooking recipe

Ingredients
    12 medium tomatoes
    1 1/2 tsp. salt
    1 1/2 tsp. sugar
    3 (10 oz.) frozen chopped spinach
    1 medium onion, chopped
    1/3 c. butter
    3 Tbsp. flour
    1 1/2 c. milk
    3/4 tsp. salt
    1/2 tsp. white pepper
Preparation
    Cut top 1/4 off tomatoes.
    Scoop out.
    Sprinkle insides with salt and sugar.
    Invert tomatoes and drain.
    Cook spinach briefly. Press water out.
    Saute onion in butter.
    Add flour.
    Stir until blended, then add milk.
    Stir until thick and bubbly.
    Add spinach, salt and pepper.
    Fill tomatoes.
    Can sprinkle tops with buttered crumbs or Parmesan cheese.
    Prepare ahead, but do not bake up to 24 hours.
    Bake at 350\u00b0 for 20 minutes.
    Let stand 30 minutes.
