Tarragon Shallot Vinaigrette - cooking recipe

Ingredients
    4 tsp. Sherry vinegar
    1 Tbsp. minced shallot
    1/2 tsp. Dijon mustard
    1/2 tsp. salt, or less
    1/4 tsp. black pepper
    1/4 c. extra-virgin olive oil
    2 tsp. finely chopped fresh tarragon
Preparation
    Whisk together vinegar, shallot, mustard, salt and pepper. Add oil in slow stream, whisking until emulsified.\tWhisk in tarragon.
    Delicious on a salad with thinly sliced fennel, red onion, and shaved parmesan. Enjoy!
