Skillet Kraut - cooking recipe

Ingredients
    1 slice salt pork (3 x 1 x 1/4-inch)
    1 Tbsp. oleo
    1 medium onion, coarsely chopped
    1 (1 lb.) can sauerkraut (undrained)
    1/2 c. water
    2 Tbsp. dark brown sugar
    1 Tbsp. red wine vinegar
Preparation
    Cut salt pork into small pieces.
    In 10-inch skillet over low heat, brown the salt pork, stirring occasionally.
    Pour off fat. Remove salt pork.
    Melt the oleo over low heat.
    Add onion and cook, stirring often, until golden.
    Add sauerkraut, water, brown sugar, vinegar and salt pork.
    Cover and simmer until liquid has evaporated, about 1/2 hour.
    This is especially good when served with picnic foods or buffet foods.
