Turkey Hash - cooking recipe

Ingredients
    2 Tbsp. oil
    2 Tbsp. margarine
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. chopped celery
    2 c. cubed cooked turkey (leftovers are ideal)
    2 c. cubed, peeled potatoes, boiled until tender and drained
    1 tsp. tarragon and salt
    1/2 tsp. pepper
Preparation
    Heat oil and margarine.
    Saute vegetables until soft.
    Add turkey, potatoes and seasonings.
    Stir to combine and spread in a greased 13 x 9-inch or smaller baking dish.
    Bake at 400\u00b0 until top is crusty and brown, about 15 minutes.
    Makes 6 to 8 servings.
