Black Beans And Rice - cooking recipe

Ingredients
    1/2 c. plus 1/8 c. dried black beans
    vegetable cooking spray
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    2 cloves garlic, minced
    1/4 tsp. salt
    1/4 tsp. pepper
    1/2 Tbsp. red wine vinegar
    1 1/2 c. water
    3 oz. can tomato paste
    1 1/2 c. hot cooked rice
    1/4 tsp. chopped tomato
    1/2 tsp. sugar
    1/8 c. sliced green onions
    2 tsp. plain nonfat yogurt
Preparation
    Sort and wash beans.
    Place in a Dutch oven.
    Cover with water 2-inches above beans.
    Let soak 8 hours.
    Drain.
    Coat a Dutch oven with cooking spray.
    Place over medium-high heat until hot.
    Add onion, green pepper and garlic.
    Saute until tender.
    Add beans, salt, pepper, chopped tomato, water and vinegar.
    Bring mixture to a boil.
    Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally.
    Add tomato paste.
    Cook an additional 15 minutes.
    Serve over rice.
    Top each serving with tomato, green onions and yogurt.
