Creamed Chicken - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    2 Tbsp. flour
    2 c. chicken stock
    1/2 c. cream
    1/4 tsp. salt
    dash of pepper
    2 egg yolks, slightly beaten
    2 c. cooked, diced chicken
    1 Tbsp. chopped pimento (optional)
Preparation
    In a saucepan, melt butter.
    Blend in flour.
    Add chicken stock and cream; stir slowly but steadily until sauce boils; boil a few minutes.
    Season with salt and pepper; stir some hot sauce into slightly beaten egg yolks.
    Blend well; combine rest of sauce.
    Add chicken and pimento (if desired).
    Season to taste; cover.
    Heat over hot water.
    Garnish with chopped parsley.
