Rosti Potatoes - cooking recipe

Ingredients
    2 lb. potatoes
    1/3 c. shortening
    1 tsp. salt
    4 slices bacon, diced
    1/2 c. minced onion
    1/2 c. shredded cheese
    2 Tbsp. hot water
Preparation
    Boil potatoes in skins.
    Cool, peel and shred.
    Melt shortening in skillet.
    Add potatoes and salt; cook until heated and yellow. Stir in bacon, onion and cheese.
    Press potatoes into a round flat cake pan and sprinkle with water.
    Cover and cook over low heat for 15 minutes or until crust forms on bottom.
    Shake pan once or twice to prevent burning.
    Place serving plate over potatoes and invert so crust side is up.
    Makes 5 to 6 servings.
