Spanish Rice - cooking recipe
Ingredients

1 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, chopped
1 c. uncooked rice
2 Tbsp. olive oil
2 c. diced tomatoes, mashed
2 Tbsp. vinegar
salt and pepper
Preparation
-
Saute first four ingredients in oil until rice is brown. Add remaining ingredients and cook until rice is tender. Can be made in casserole. If so, sprinkle with Provolone cheese and bake at 400\u00b0 until cheese is brown and bubbly. Serves 6.
