Glazed Carrot Coins - cooking recipe

Ingredients
    2 c. thinly sliced carrots
    2 Tbsp. orange juice
    3 Tbsp. packed brown sugar
    1 Tbsp. butter or margarine
    1/2 tsp. grated lemon peel
Preparation
    In a quart casserole, combine carrots and orange juice. Cover.
    Microwave on High for 3 minutes.
    Stir in remaining ingredients.
    Re-cover.
    Microwave on High for 2 to 4 minutes or until carrots are tender-crisp.
    Let stand 2 minutes.
