Spiced Cabbage - cooking recipe

Ingredients
    1 tsp. vegetable oil
    2 garlic cloves, minced
    1 large onion, sliced
    2 medium head cabbage
    2 to 3 c. chicken stock
    1/2 tsp. salt
    1 tsp. grated ginger root
    1 tsp. thyme
    1/2 tsp. crushed red pepper
    2 carrots, sliced
Preparation
    In a large Dutch oven, heat oil.
    Saute garlic, onion and cabbage.
    Remove outer layer of cabbage and wash.
    Shred the whole cabbage including the dark green leaves.
    Add shredded cabbage to the sauteed vegetables.
    Add chicken stock, salt, ginger root, thyme and red pepper.
    Cover and cook over medium heat about 12 minutes.
    (Be careful not to overcook.
    Cabbage should be firm and green, not soggy.) Makes 6 to 8 servings.
