Sister Sarah'S Gingered Chicken - cooking recipe
Ingredients

4 large chicken breast halves
chicken broth
1 small can undiluted orange juice concentrate
about 1 Tbsp. grated ginger or to taste
3 Bartlett or 6 Seckle, etc. pears
Preparation

Poach chicken in enough broth to cover pieces until chicken is barely done.
Remove and discard skin and bones.
Cut meat into large chunks and set aside.
Reserve broth.
Peel pears and cut into quarters if large, halves if very small.
Core pears. Combine juice concentrate, reserved broth and ginger in skillet. Add pears and poach for 5 minutes.
Add chicken and cook until pears are just barely cooked through and chicken is hot.
Serve over rice.
