Chinese Almond Curd - cooking recipe

Ingredients
    1 can evaporated milk (13 oz.)
    2 envelopes unflavored gelatin (2 Tbsp.)
    2 3/8 c. water
    1/2 c. sugar
    2 1/2 tsp. almond extract
    1 can fruit cocktail (17 oz.)
Preparation
    Mix the water and milk in a saucepan. Sprinkle the gelatin over the mixture.
    Place on low heat, stirring constantly, until the gelatin dissolves.
    Remove from heat. Stir in the sugar and 1 1/2 teaspoons almond extract.
    Pour into a square or rectangular container. Chill until firm and then slice into small pieces. Transfer the pieces into a small serving bowl. Add 1 teaspoonful of almond extract. Stir in the fruit cocktail and then refrigerate until served.
