Eggplant Parmigiana - cooking recipe

Ingredients
    1 medium eggplant
    oil
    seasoned dry bread crumbs
    Italian tomato sauce
    1/2 lb. Mozzarella cheese
Preparation
    Peel eggplant, if desired.
    Slice crosswise in 1/4-inch slices.
    Brush lightly with oil.
    Dip each slice in bread crumbs or breading mixture.
    Bake on oiled cookie sheet in a 400\u00b0 oven, turning once when brown.
    Delicious when eaten as is.
