Winter Squash Quiche - cooking recipe

Ingredients
    1 (9-inch) pastry shell
    4 slices bacon
    2 Tbsp. chopped onion
    1 c. shredded Swiss cheese
    3 beaten eggs
    1 1/2 c. milk
    1 c. mashed, cooked winter squash
    1/2 tsp. salt
    1/8 tsp. ground nutmeg
    1/8 tsp. pepper
Preparation
    Bake pastry and keep it warm.
    In small skillet, cook the bacon until crisp.
    Drain bacon on paper toweling.
    Finely crumble and set aside.
    Reserve 1 tablespoon bacon drippings.
    Cook onion in drippings until tender.
    Sprinkle cheese, bacon and onion in the warm pastry shell.
    In a bowl, combine the eggs, milk, squash, salt, nutmeg and pepper; pour into pastry shell.
    Bake in a 325\u00b0 oven for 40 to 50 minutes or until knife inserted near center comes out clean.
    Let stand 10 minutes.
    Garnish.
    Makes 6 servings.
