Chicken Long Rice - cooking recipe

Ingredients
    1 lb. boneless chicken breasts
    1 inch piece Ginger root
    2 c. chicken stock
    1 carrot cut into Julienne strips
    1 c. thinly sliced celery
    1/2 onion thinly sliced
    10 Shiitake mushrooms (soaked and sliced)
    2 oz. long rice, soaked in warm water for 1 hour
    3 stalks green onion, cut into 1 inch pieces
Preparation
    Soak mushrooms in warm water for 20 minutes, then cut off the stems.
    Remove skin from chicken and cube.
    Crush ginger root.
