Stuffed Chicken Quarters - cooking recipe

Ingredients
    3 slices white bread
    1 egg
    1/2 c. shredded cheese (2 oz.)
    1/8 tsp. pepper
    salt
    1 (2 1/2 to 3 lb.) broiler-fryer, cut in quarters
    1 zucchini, chopped
Preparation
    Melt butter
    and cook zucchini until tender, 2 minutes. Stir frequently.
    Remove from heat.
    Into saucepan, tear bread into small pieces,
    stir in
    eggs, cheese, pepper and 1/2 teaspoon salt.
    Preheat
    oven
    to
    400\u00b0.
    On
    each
    quarter, with fingers, carefully
    loosen
    skin
    from
    meat to form a pocket. Spoon stuffing in
    each
    pocket.\tPlace chicken in 13 x 9-inch baking pan.
    Bake 50 minutes until fork-tender.
    When ready to serve, brush with honey and sprinkle lightly with salt.
