Out Of This World Eggplant - cooking recipe
Ingredients

1 medium eggplant, peeled and cubed
2 eggs, beaten
1 small onion, chopped
salt and pepper to taste
1/4 c. milk
1/2 c. cracker crumbs
2 Tbsp. butter, melted
buttered bread crumbs (for topping)
Preparation

Boil eggplant until tender; drain and mash. Add eggs, onion, salt, pepper, milk, crumbs and butter. Mix well and pour into buttered casserole. Sprinkle top with buttered crumbs and bake 25 to 30 minutes in a 350\u00b0 oven. Makes 6 to 8 servings.
