Black-Eyed Peas - cooking recipe

Ingredients
    1 lb. dried black-eyed peas
    8 c. (2 qt.) water
    1/2 lb. ham hock
    1 c. chopped onion
    1 Tbsp. salt
    1 tsp. Tabasco sauce
Preparation
    Rinse peas and add 1 quart of water.
    Heat to boiling and let stand 2 hours.
    Put ham hock in 1 quart of water and simmer 1 hour.
    Add ham hock in cooking liquid with onion, salt and Tabasco to peas.
    Cover.
    Cook 2 hours until tender.
    Remove meat from bone.
    Return to peas.
    Yields 8 servings.
    Has 250 calories.
