Bran Muffins - cooking recipe

Ingredients
    2 1/2 c. whole wheat flour
    2 1/2 c. all-bran cereal
    1 1/4 tsp. salt
    2 Tbsp. sugar
    1 Tbsp. baking powder
    2 c. skim milk
    1/2 c. canola oil or other vegetable oil
    5 large eggs, beaten, or egg substitute
    1 c. pecans or walnuts, chopped
    1 c. honey
    2 tsp. vanilla
    3/4 c. raisins
    2 c. grated carrots
    1 c. crushed pineapple (drain first)
    2 apples, chopped coarsely
    3/4 c. chopped dates
    12 prunes, cut into small pieces
Preparation
    Preheat oven to 350\u00b0.
    Mix raisins, milk and bran together; let soak for 15 minutes to soften.
    Combine rest of liquids and add to bran mixture.
    Mix all dry ingredients, fruit and nuts; add to bran mixture.
    Do not overmix.
    Fill greased muffin cups or muffin papers to top.
    Bake for 30 to 40 minutes.
    Makes about 2 dozen.
