Jambalaya - cooking recipe

Ingredients
    1 large onion, chopped
    3 to 4 cloves garlic, chopped
    1 c. chopped celery
    3 Tbsp. olive oil
    1/2 c. chopped bell pepper
    1/2 c. fresh parsley or 2 Tbsp. dried
    2 qt. canned tomatoes
    1 1/2 c. uncooked rice
    1 to 2 c. wine
    1/2 to 1 lb. peeled shrimp
    1/2 to 1 lb. cut up Polish sausage
    1 to 2 c. cooked chicken or ham
    Cajun seasoning and salt to taste
Preparation
    Saute onion, garlic, celery and bell pepper in oil for 5 minutes.
    Add remaining ingredients.
    Bring to a boil, then simmer slowly until rice is cooked, stirring often, about 45 minutes.
