Chitterlings - cooking recipe

Ingredients
    No. 10 bucket or 2 lb. chitterlings
    3 qt. water
    1 tsp. salt
    1/2 tsp. red pepper flakes
    1 medium onion
    1/4 lb. butter or margarine
Preparation
    Cook chitterlings for 1 hour or until tender.
    Drain off water and remove onion.
    Prepare iron skillet with margarine.
    Cut chitterlings in 2-inch pieces and fry until golden brown.
    Serve with your favorite side dishes, such as macaroni and cheese, rice or greens.
    Hot sauce is also offered.
    Store leftovers in refrigerator.
