Lo-Cal Chicken Primavera - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 lb. boneless chicken breasts, cut in chunks
    2 c. sliced fresh mushrooms
    1 medium onion, cut into chunks
    1/2 c. green and red pepper, diced
    1 garlic clove, minced
    1/4 c. pitted ripe olives, cut in half
    1 (16 oz.) can Italian-seasoned tomatoes or use regular canned tomatoes
    1/2 tsp. sweet basil
    1 tsp. oregano
    1/2 tsp. salt
    1/4 tsp. pepper
    dash of hot pepper sauce, if desired
Preparation
    Heat oil in a large skillet.
    Add chicken, mushrooms, onion, green pepper and garlic.
    Cook, stirring occasionally, until chicken is cooked through and vegetables become soft.
    Add olives and tomatoes that have been broken into chunks.
    Add seasonings. Simmer mixture gently to partially reduce liquid.
    Serve over a bed of Italian Risotto or pasta of your choice.
    Serves 4.
