My Mother'S Apple Pirog (Pie) - cooking recipe

Ingredients
    9 to 12 apples
    1/2 c. sugar
    2 tsp. cinnamon
    1/2 c. oatmeal
    3 tsp. lemon juice
    1/4 lb. butter
    1/2 c. sugar
    2 eggs plus 1 white
    3 c. flour
    1/4 c. milk
    3 tsp. baking powder
    1/2 tsp. salt
    1 tsp. vanilla
    1 egg yolk plus a tsp. water
Preparation
    Pare apples, cut into eighths and discard centers with seeds. Cover with 1/2 cup sugar (1 cup if you prefer greater sweetness), cinnamon and oatmeal.
    Sprinkle with lemon juice and set aside while preparing the dough.
