Artichoke Balls - cooking recipe

Ingredients
    1 (14 oz.) can artichoke hearts
    1 c. Italian breadcrumbs
    2 eggs
    2 Tbsp. grated Parmesan or Romano cheese
    3 Tbsp. olive oil
    2 cloves garlic, finely chopped
    additional breadcrumbs and cheese
Preparation
    Cut artichoke hearts into small pieces, then mash with a fork. (Do not puree in blender.)
    Add breadcrumbs, eggs and cheese. Heat olive oil until very hot.
    Remove from heat.
    Add garlic and wait until garlic stops sizzling.
    Pour oil and garlic into artichoke mixture.
    Mix well.
    Place in refrigerator overnight or at least one hour.
    Roll into small balls.
    Roll balls into mixture of 2 tablespoons breadcrumbs and 1 tablespoon cheese; mix more as needed.
    Yield:
    50 balls.
    Bake 10 minutes at 350\u00b0.
    Eat cool or warm.
