Banana Muffins - cooking recipe
Ingredients

2 to 2 1/2 ripe bananas, mashed with fork
1 egg, slightly beaten
1/3 c. oil
2 Tbsp. honey
2 Tbsp. sugar
1/2 tsp. vanilla
1 1/2 Tbsp. water
1 1/3 c. whole wheat pastry flour
2 tsp. baking powder
1/4 tsp. nutmeg
Preparation

Mix mashed bananas with beaten egg, oil, honey, vanilla and water.
In another bowl, combine dry ingredients.
Make a well in center and pour in wet mixture all at once.
Stir just until moistened; batter should be lumpy.
Fill greased or non-stick tins 2/3 full.
Regular muffins bake 30 to 35 minutes at 350\u00b0. Mini-muffins bake about 20 minutes at 350\u00b0.
