Mardi Gras Slaw - cooking recipe

Ingredients
    2 c. thinly chopped or grated red cabbage
    4 c. thinly chopped or grated green cabbage
    1 cucumber, peeled and grated
    1 c. grated red onion
    1/2 tsp. salt
    1 carrot, grated
    1/2 c. chopped celery leaves
    1/2 c. chopped cilantro
    2 Tbsp. chopped, fresh dill
    2 Tbsp. chopped, fresh Italian parsley
    1/2 c. vinegar
    1/2 c. brown rice syrup or 2 Tbsp. sugar and 1/4 c. water
Preparation
    Mix all of the vegetables and sprinkle in the salt.
    Squeeze by hand until the cabbage \"weeps\".
    Drain the liquid and add remaining ingredients, mixing by hand or with a wooden spoon.
    Add freshly ground pepper to taste.
