Zesty Baked Chicken - cooking recipe

Ingredients
    1 broiler-fryer, cut up
    salt and pepper
    1/2 c. lemon juice
    2 tsp. tarragon (optional)
    1/4 lb. mushrooms, sliced
    1 tsp. Herb-Ox chicken style bouillon
Preparation
    Discard chicken skin; rub pieces with salt and pepper. Arrange in casserole dish.
    Mix lemon juice, tarragon and bouillon.
    Pour over chicken and turn.
    Add mushrooms.
    Let stand at room temperature for 1/2 hour.
    Bake in 350\u00b0 oven for about 1 hour, turning often and basting with marinade.
    Cook until chicken is tender and cooked through.
    Makes 4 servings.
