Cheese Blintzes - cooking recipe

Ingredients
    1 1/2 c. all-purpose flour
    1 tsp. salt
    1 1/4 c. water
    5 eggs
    2/3 c. milk
    liquid oil
    1 lb. cottage cheese
    sour cream (optional)
    sugar
Preparation
    Combine flour and salt (sift).
    Add water; mix until smooth. Add 4 eggs; beat well.
    Add milk; mix to thin batter.
    Cook slowly until pancake is lightly browned on bottom and \"set\" on top.
    Turn on foil with browned side up.
    Mix cheese and 1 egg.
    Add sugar to taste.
    Beat (not too much).
    Put spoonful of cheese in center of each pancake on browned side; fold.
    Brown in small amount of hot oil.
    If you wish, serve topped with sour cream.
