Cappuccino Chip Muffins - cooking recipe
Ingredients

2 c. flour
3/4 c. sugar
2 1/2 tsp. baking powder
2 tsp. instant Espresso coffee powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1 c. milk, scalded and cooled (if desired)
1/2 c. butter or margarine, melted and cooled
1 egg, lightly beaten
1 tsp. vanilla
3/4 c. semi-sweet chocolate mini-chips
Preparation

Preheat oven to 375\u00b0.
Grease 12 muffin cups or line with paper baking cups.
In a large bowl, stir together flour, sugar, baking powder, Espresso powder, salt and cinnamon.
In another bowl, stir together milk, butter, egg and vanilla until blended.
Make a well in center of dry ingredients; add milk mixture and stir just to combine.
Stir in chips.
Spoon batter into muffin cups.
Bake 15 to 20 minutes or until a toothpick tested in the center comes out clean.
Cool 5 minutes before removing from tin.
Serve warm or cool.
