Mediterranean Rice Pilaf - cooking recipe

Ingredients
    2 tsp. oil
    1 medium onion, chopped
    1 (13 3/4 oz.) can chicken broth
    1/2 tsp. pumpkin pie spice or ground cinnamon
    1/2 tsp. curry powder
    2 1/4 c. Minute instant brown rice, uncooked
    1/4 c. chopped dried apricots
    1/4 c. raisins
Preparation
    Heat oil in medium saucepan on medium-high heat.
    Add onion; cook and stir until tender.
    Stir in broth and spices.
    Bring to boil.
    Stir in rice, apricots and raisins.
    Return to boil. Reduce heat to low; cover and simmer for 5 minutes.
    Remove from heat and stir; cover.
    Let stand 5 minutes.
    Fluff with fork. Makes 6 servings.
