Beet-Rhubarb Compote - cooking recipe

Ingredients
    3 to 4 medium size beets
    1 lb. rhubarb (I use Seabrook Farms frozen rhubarb)
Preparation
    Wrap each beet in aluminum foil. Bake in a 350\u00b0 oven until done.
    Cook the rhubarb according to directions.
    Dice cooked beets. Add to the cooked rhubarb.
    Chill. Serve as side dish. It's colorful with a different taste.
