Salmon Cakes - cooking recipe

Ingredients
    1 can salmon
    1/2 c. chopped onion or scallions
    1 large egg, beaten
    1 slice toast, shred to crumbs
    1 Tbsp. honey Dijon mustard
    lemon pepper
    corn meal or flour
    1/2 c. vegetable oil
Preparation
    Drain and remove center bone from salmon.
    Break up thoroughly. Mix in onion, toasted crumbs, seasonings to taste, egg and honey Dijon.
    Form small to medium patties.
    Coat with corn meal. Skillet brown patties in vegetable oil.
    Makes about 8 medium cakes.
    Great with pasta.
