Roquefort Spread - cooking recipe
Ingredients

1/2 lb. Blue or Roquefort cheese
1 medium red onion, chopped
3/4 c. olive oil
1 Tbsp. red wine vinegar
1 Tbsp. lemon juice
1/2 tsp. dry mustard
1/3 c. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
Preparation
-
Spread cheese in 9-inch pie plate.
Mix remaining ingredients. Spread over cheese.
Cover with plastic wrap.
Refrigerate for several hours.
Serve with Melba rounds or cocktail pumpernickel.
