Eggplant Italiano - cooking recipe

Ingredients
    1 medium eggplant
    1 1/2 c. grated Mozzarella (approximately 12 oz.)
    bread crumbs
    olive or vegetable oil
    milk
    3 (8-inch) zucchini
    2 c. prepared spaghetti sauce or 1 can seasoned stewed tomatoes, cut up with 1 (8 oz.) can tomato sauce
    1/2 c. Parmesan cheese, tossed with 1/4 c. bread crumbs
Preparation
    Peel and slice, 1/2-inch thick, the eggplant.
    Dip in milk, then in bread crumbs.
    Fry in oil until golden brown.
    Meanwhile, slice 1 zucchini 1/2-inch and arrange on bottom of 9 x 13-inch baking dish.
    Top with browned 1/3 eggplant, 1/3 cheese and 1/3 sauce.
    Layer zucchini, eggplant sauce and cheese until gone.
    Top with Parmesan cheese crumb mixture.
    Bake at 325\u00b0 for 40 minutes, covered and 15 minutes, uncovered.
    Serve with French bread, garlic bread and/or cooked fettuccini.
