Vegetable Pilaf - cooking recipe

Ingredients
    1 1/3 c. water
    1 tsp. chicken flavored bouillon granules
    1/2 c. long grain rice (uncooked)
    1 1/2 c. sliced mushrooms
    1 1/4 c. shredded carrot
    1/2 c. water
    1 c. chopped parsley
    1/3 c. thinly sliced green onions
    1/4 tsp. pepper
    1/4 c. chopped pecans, toasted
Preparation
    Combine 1 1/3 cups water and bouillon granules in a medium saucepan; bring to a boil and add rice.
    Cover; reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed. Add mushrooms, carrots, 1/2 cup water, parsley, green onions and pepper to rice; stir well.
    Cover and cook over low heat 5 minutes.
    Transfer rice to a serving dish.
    Sprinkle with toasted pecans.
    Yield:
    8 servings (about 82 calories per 1/2 cup serving).
