Black Bean Soup - cooking recipe

Ingredients
    4 c. washed black beans
    cold water as needed
    3 celery sticks
    3 large onions, finely chopped
    1/2 c. butter
    2 1/2 Tbsp. flour
    1/2 c. finely chopped parsley
    rind and bone of 1 cooked smoked ham
    3 leeks, thinly sliced
    4 bay leaves
    1 Tbsp. seasoned salt
    1 tsp. fresh ground black pepper
    1 c. dry Madeira wine
    pinch of cayenne pepper
    croutons and sour cream (optional)
Preparation
    Soak beans overnight in enough water to cover, then drain. Add 5 quarts cold water and cook beans over low heat for 1 1/2 hours.
